After enjoying Xingu, I knew we were going to have to brew a batch for ourselves. So why not brew a 10 gallon batch!

Here we go! I looked through my “Clone Brews” and found the Xingu recipe for 5 gallons. So I pumped all the recipe ingredients into my Pro-Mash Software and worked up a 10 gallon batch!

Mash at 154° for 60 to 90 min.
Sparge
Cool to 66-70°F and pitch yeast
Notes
Because this was a 10 gallon batch – I decided to pitch more yeast that one pack. So I pitched Saflager S-23 with the Bavarian Lager yeast. I think with higher gravity and lager batches of beer, it is better to pitch more yeast so the beer ferments quicker.
Primary Fermentation 14 days @ 55°F
Secondary Fermentation 14 days @ 45°F
Lager @ 35°F
Bottle / Keg Conditioning (Carbonation) 7 days

Here is a pic of it going in the fermenter. By the way, use a blow off tube for this size batch of beer. Also all the beer could not fit in one fermenter. So I put about 8 gallons in one and two gallons in another fermenter. The two gallon batch recieved American Chicao Ale Yeast.

It will be fun to compare the flavors.
